Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 small red bell pepper , thinly sliced
  • 1 small yellow bell  pepper , thinly sliced
  • 1 small green bell  pepper , thinly sliced
  • 1 tbsp minced garlic
  • 14 oz plum tomatochopped
  • ½  tsp ground cumin
  • medium eggs (with yolks)
  • 2 tbsp chopped chives

Directions

  1. Heat  the oil large frying pan over low heat
  2. Add the peppers and gently cook for 10 minutes or until soft
  3. Stir in the garlic and cook for 1-2 minutes
  4. Add the  tomatoes , paprika , and cumin
  5. Stir to combine well
  6. Increase the heat to medium and cook , uncovered for 10 to 15 minutes , or until the tomatoes have reduced  to a thick pulp
  7. Then carefully break 2 egg whites in the mixture and scramble until the whites are cooked
