Ingredients
- 1 tbsp extra virgin olive oil
- 1 small red bell pepper , thinly sliced
- 1 small yellow bell pepper , thinly sliced
- 1 small green bell pepper , thinly sliced
- 1 tbsp minced garlic
- 14 oz plum tomato, chopped
- ½ tsp ground cumin
- 2 medium eggs (with yolks)
- 2 tbsp chopped chives
Directions
- Heat the oil large frying pan over low heat
- Add the peppers and gently cook for 10 minutes or until soft
- Stir in the garlic and cook for 1-2 minutes
- Add the tomatoes , paprika , and cumin
- Stir to combine well
- Increase the heat to medium and cook , uncovered for 10 to 15 minutes , or until the tomatoes have reduced to a thick pulp
- Then carefully break 2 egg whites in the mixture and scramble until the whites are cooked
