Check out this amazingly delicious and healthy Mediterranean Stir Fry recipe. Perfect for summer!

DIRECTIONS

  1. Heat the olive oil in a skillet over medium heat.
  2. After olive oil heats up, throw in the following and sauté over medium heat for about seven minutes

INGREDIENTS

  • 1 bunch of fresh asparagus
  • 2 cups fresh sliced mushrooms
  • 1/2 cup onion diced
  • 1 tbs minced garlic
  • 1 cup roasted tomatoes
  • 1/2 cup cooked artichokes
  • 1/2 lb bacon cooked and crumbled
  • Garnish with black olives and feta
