- 1 cup shrimp, cooked
- 1/2 cup broccoli/cauliflower
- 1/2 cup whole grain pasta, cooked
- Extra virgin olive oil
- 1 tbsp lemon juice
- 1 tbsp pesto
- 1 cup parsley, minces
- In a medium low hot frying pan, heat up the oil. Quickly toss in the garlic, and the parsley. Sauté this for no more than 15 seconds, or so.
- Add shrimp to pan. Sauté for about 1 minute.
- Add in pesto
- Stir and blend everything together. Mix for another minute.
- Serve on individual plates on top of the pasta
